black sesame ‘amaretti’

 

because black sesame in sweet treats is nothing short of life changing

what you need

1 cup almond flour

2/3 cup black sesame seeds

1/2 cup granulated sugar

pinch of salt

3 tbsp powdered sugar + more for rolling

1 egg white

1/2 tsp sesame oil

what you do

In a food processor, pulse together black sesame seeds, granulated sugar, and salt– about 3-4 short pulses should do the trick. do not over pulse! the mixture should be the texture of slightly wet sand. mix in almond flour and 3 tbsp of powdered sugar, then add egg white and sesame oil. It won’t seem like enough liquid at first, but the dough magically comes together every time, so keep mixing!

once the dough has come together, wrap tightly in plastic wrap and chill for at least one hour.

Preheat the oven to 325 F and line a baking sheet with parchment paper. Form dough into about ~12 even balls, then roll the balls in powdered sugar. Place on baking sheet and press down gently to just barely flatten. Bake for about 15 mins or until slightly puffed and cracked. A good way to tell if they are done is to carefully lift one up and see if the bottom is beginning to brown… if yes, they are ready!

allow to cool and enjoy with your morning coffee or after dinner espresso :)
