Dehydrated Citrus Wheels

THE perfect garnish for any citrusy cocktail.

what you need:

lemons and limes

wire cooling rack

what you do:

heat oven to 200 degrees F. slice lemons and limes (aim for 3mm thick). I like to use a serrated knife. lay wheels out on a paper towel and use a second sheet to blot out as much juice as possible. place a wire cooling rack on top of a baking sheet and lay the wheels out. they should not overlap but no need to space them out, they will shrink as they dehydrate. bake for 2.5-3.5 hours, flipping halfway through. the wheels are ready when they are completely dry and not sticky to touch. some wheels will take longer than others, so towards the end of the time check periodically and remove the ones that are done. allow to cool before storing in a glass jar. use for up to 3 months in all of your cocktail creations!
