my version of Nobu’s miso black cod

and it really couldn’t get easier. I used Wishbone’s recipe to start and tweaked to my preference.

what you need

1 cup white miso paste

1/4 c sake

1/4 c mirin

2-3 pounds black cod, portioned

what you do

combo miso paste, sake, and mirin in a sauce pan. heat, stirring frequently, until combined. allow to cool while you portion the black cod.

combine cod and miso mix and allow to marinate for at least 6 hours and up to 2 days.

set broiler to high, transfer fillets to a sheet pan lined with parchment paper, and broil 5-7 mins until the fish is cooked through. remove pin bones from fillets and then I like to use a torch to further caramelize the crust.
