what you need
ripe heirloom tomatoes
your favorite high quality EVOO
few cloves of garlic
kosher salt
crusty loaf
anchovies (optional), check out the anchovies from favorite peeps at fishwife
what you do
using a box grater, grate tomatoes into a bowl discarding (or perhaps tossing into a pot to make a tomato sauce). season with a healthy drizzle of EVOO (3-4 tbsp) and few pinches of salt. taste and don’t be afraid to add more salt.
toast slices of your loaf. rub garlic over the top then generously spoon tomato sauce over. top each slice with a single anchovy. serve immediately
