learned this recipe in culinary school… and rumor is it came from Eleven Madison Park pre vegan…
what you need
300 gr 00 flour (finely ground italian flour)
5 gr kosher salt
175 gr egg yolks
1 egg
5 gr water
what you do
mix flour and salt, then dump on work surface and form a well. Mix egg yolks, egg, and water then pour into the center of the flour well. Use a fork to gradually mix in the flour, and once the dough begins to come together, knead with your hands until a soft dough forms (5-7 mins). Cover and allow to rest for 20 mins.
make whatever pasta shape you desire- tortellini, tagliatelle, ravioli…. the list goes on and on…
