roasted japanese sweet potatoes with rosemary gremolata
what you need
3 large japanese sweet potatoes, cut into thick fries
kosher salt and freshly cracked black pepper
olive oil
1 large garlic clove, finely chopped
1 tbsp finely chopped fresh rosemary
1 tbsp finely chopped parsley
zest of 2 lemons
what you do
preheat oven to 400 degrees F with two baking sheets inside. while preheating, prep your sweet potatoes by cutting up and then tossing generously with olive oil, salt and pepper. Once oven is preheated, line with parchment paper and dump sweet potatoes on top, spreading out and making sure cut sides are facing against the baking sheet.
bake for 30-40 mins, until golden brown. If halfway through the potatoes do not look like they are beginning to brown at all, turn the oven up to 425 F.
when done, remove from the oven and immediately toss well with garlic, rosemary, parsley and lemon zest. serve immediately!
