sourdough discard crackers
what you need
200g sourdough starter
100g AP flour
35g rye flour
30g olive oil + more for brushing
1 tsp of kosher salt
seasonings of choice (flaky salt, sesame, parmesan, za’atar, etc)
what you do
combine all ingredients to make dough, cover in plastic wrap, and chill for an hour.
preheat oven to 325 F and line two baking sheets with parchment paper. flour your work surface then divide the dough in half and roll out to about ~1/8 in thick. Brush with olive oil and sprinkle with desired seasonings. Use a knife or a pastry cutter to cut the dough into long rectangles or squares, depending on your desired shape, then transfer to the baking sheets. Bake for 10-12 mins or until the edges start to brown. Cool fully before serving :)
