lamb meatballs

I’m afraid of how delicious these are

what you need

1 pound of ground lamb

1/2 red onion, finely chopped

1/3 c chopped parsley

1/2 tsp cayenne

1 tbsp garam masala

1 egg

big pinch of kosher salt and fresh cracked pepper

heaping spoonful of ricotta (optional)

neutral oil (for frying)

what you do

mix everything together in a bowl. fry up a small test patty to check for seasoning. add additional salt/ pepper as needed. chill mixture in the meantime

roll meatballs into 1 inch balls (the mixture will be quite wet/ sticky and works best when chilled). heat up neutral oil in a large pan/skillet. oil should come ~1/4- 1/2 inch up the side of the pan. fry meatballs until golden brown on all sides. remove from oil and place on a paper towel.

serve with pita and maybe some dips of your choice!
