Fried Eggplant with Honey and Goat Cheese

This stuff is crack. Please trust me.

 

what you need:

1 eggplant

2 eggs

1/2 c ap flour

1-2 c panko

neutral oil (vegetable or canola)

honey

goat cheese (not pre-crumbled)

salt

what you do:

slice eggplant ~1/4 inch thick and lay out on a baking sheet lined with a paper towel. Sprinkle with a generous amount of salt and let sit for 20 mins to draw out the moisture. Flip and repeat on the other side. in the mind time, prepare 3 plates: first with 1/2 cup flour, second with 2 beaten eggs, and third with a cup of panko.

After eggplant has been salted (and dried with a paper towel), take each slice and drench in flour, then egg, then panko (making sure it is fully coated). Heat a neutral oil in a large sauté pan over medium high heat. the oil should come 1/4 in up the side of the pan, so we’re talking a decent amount. once hot, place the eggplant into the pan (should immediately sizzle and bubble) and fry. flip once golden brown (after 3-4 mins) and fry until the other side is nice and brown (another 2-3 mins). remove and place on a plate lined with paper towels to soak up excess grease. sprinkle with sea salt immediately

once all eggplant has been fried, sprinkle with a healthy amount of goat cheese and honey (and leave some extra to add on more as you please). Try not to devour all at once :)
