An Idea for Tuna Crudo

what you need

sushi-grade tuna

mango or another in-season fruit, like peach or nectarine, small diced

thinly sliced a jalapeño

lime zest

lime juice

sesame oil

your best EVOO

flaky salt

what you do

the idea is salt, sweet, acid, fat (and heat!) thinly slice tuna and arrange on a few small plates. top each piece with thinly sliced jalapeño, spoonful of fruit, few drops of sesame oil, and lime zest. drizzle plate with your best EVOO, a squeeze of lime, and sprinkle of flaky salt. eat immediately or chill until ready to serve.
