Grilled Chicken Thighs
(fit for any salad)
What you need
8 chicken thighs (deboned)
3 large garlic cloves, minced
1/4 c olive oil
Pinch of oregano, dill week, coriander, celery seed each
Tsp of salt + few cracks of fresh pepper
Lemon wedges (post grilling)
What you do
Mix chicken with the above ingredients and let marinate for 30 mins in the fridge. Remove from fridge while your grill preheats.
Set your grill to high and preheat for 10 mins. Brush down your grill then arrange the chicken thighs skin side down (shake off excess marinade/ oil to avoid flare ups). Cook undisturbed for 4 mins. Flip and cook for another 4-5 mins until brown/charred and cooked through. When in doubt use a thermometer and make sure the internal temp reads 160.
Remove from grill and hit it with a few squeezes of fresh lemon juice.
This chicken will be delicious on any salad. I ate it with a romaine wedge, sliced radishes + cucumber, grilled halloumi, and a lemon dressing.
