Nonna’s Cheesecake

 
 

what you need:

9” spring form pan

stand mixer with whisk

For Crust:

1 1/2 cups graham cracker crumbs

1/4 cup sugar

1/2 cup melted butter

For Filling:

3- 8 oz packs cream cheese

1 1/2 cups sugar

4 eggs

1 tsp vanilla

1/3 tsp salt

what you do:

preheat oven to 350 degrees. combine crumbs, sugar, and butter then press into the bottom and up the sides of the spring pan. chill crust. whisk cream cheese, sugar, vanilla, and eggs (one at a time) in the bowl of a stand mixer until smooth. pour into prepared crust and bake for 50 mins (check to see if cake jiggles in the middle. if so, bake another 10 mins). make sure to place a piece of tin foil on the rack below the cake to catch any butter drippings. cake is done when golden brown. cool before serving.
