Italian Chopped Salad

 

Everyone has their own version, here’s mine.

What you need

For the salad base

Thinly sliced radicchio, fennel, and a hearty salad green (kale, frisée, or iceberg lettuce)

For the toppings

Chickpeas, thinly sliced red onion (take a bite off by soaking in ice water), torn genoa salami, marinated artichokes, pepperoncini, sun-dried tomatoes, ricotta salata

For the dressing

Juice of two lemons

Olive Oil

Salt + Pep

What you do

Assemble your salad by layering the salad base with the toppings.

For the dressing, in a blender, combine the juice of two lemons + a pinch of salt and pepper. With the blender on, slowly drizzle in double the amount of olive oil as lemon juice. Pour into a jar and add a pinch of oregano, mix in at the end.
